 Enjoy this festive dish often seen at Kaiseki meals, now easily made at home!

Servings: 3 servings

Time: 60 minutes

 

Ingredients

  • 200g scallops
  • Appropriate amount of sake
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 2 garlic cloves
  • 38g vermicelli noodles
  • 6 tbsp soy sauce

Prepare all the ingredients and confirm your side materials in advance, as the steps can be a bit detailed.

Open the package, rinse and soak the scallops under running water. Clean off any impurities from the surface and wait for open the shells.

Use your hands to gently pry open the shells. Then, use a knife to scrape the scallop from the top edge of the shell.

Tip for cleaning the scallops: Use kitchen scissors to carefully remove the black internal organs. This method is clean and efficient. Then, rinse both the inside and outside of the shell and the scallop meat thoroughly.

Soak the 38g of vermicelli noodles until soft.

Heat up some oil in a pot, then add the chopped garlic, 1 tbsp of sake, and 1 cup (about 250g) of water. Cook on low heat until it comes to boil.

Once the pot is boiling, turn off the heat and soak the vermicelli noodle for 15 minutes.

Chop the chili and garlic, then mix them together to make garlic paste.

Add 1 tbsp of garlic paste and 5 tbsp of soy sauce into the pan and stir-fry until the garlic paste turns golden. Then turn off the heat.

Add the remaining garlic paste, 1 tbsp of soy sauce, 1 tbsp of sugar, and 1/2 tsp of salt. And mix everything well.

Add the prepared garlic mixture to the scallops, stirring gently without heating it up.

 Place the soaked vermicelli and garlic mixture on the scallop shells. Add 1/3 pots of water water into the pot and steam on low heat for 10 minutes.
